Chicken Fajitas

Cook Time: 20 Minutes

Yield four servings.

INGREDIENTS

  • 1 onion, yellow, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 tsp ground cumin
  • 1 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 2 tbsp. olive oil
  • 4 boneless skinless chicken breasts
  • 1 avocado, sliced
  • 4 6-inch whole wheat flour tortillas

DIRECTIONS

  1. Add all the fajita seasoning ingredients and 1 tbsp. of olive oil to a small mixing bowl and stir together. Cut the chicken into strips and toss with the spice mixture.
  2. Heat 1 tbsp. of olive oil in a large skillet over medium high heat. Sear the chicken for about 5 minutes on each side.
  3. Once the chicken has finished cooking, remove it to a plate and let it rest for a couple of minutes. Add the bell peppers and onion to the same skillet over medium heat and saute for 4-5 minutes, stirring frequently.
  4. Add the chicken back into the skillet and stir everything together
  5. Serve immediately with tortillas and sliced avocados
