Chicken Fajitas

Yield four servings.
INGREDIENTS
- 1 onion, yellow, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1/2 tsp ground cumin
- 1 tsp garlic powder
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp oregano
- 2 tbsp. olive oil
- 4 boneless skinless chicken breasts
- 1 avocado, sliced
- 4 6-inch whole wheat flour tortillas
DIRECTIONS
- Add all the fajita seasoning ingredients and 1 tbsp. of olive oil to a small mixing bowl and stir together. Cut the chicken into strips and toss with the spice mixture.
- Heat 1 tbsp. of olive oil in a large skillet over medium high heat. Sear the chicken for about 5 minutes on each side.
- Once the chicken has finished cooking, remove it to a plate and let it rest for a couple of minutes. Add the bell peppers and onion to the same skillet over medium heat and saute for 4-5 minutes, stirring frequently.
- Add the chicken back into the skillet and stir everything together
- Serve immediately with tortillas and sliced avocados
